Green Mango Peanut Relish
Makes about 2 cups
Tangy mango and crunch peanuts make a great side for Black Eye Pea Cakes or any rich grilled or roasted entree. Prepare this relish before the rest of the meal to allow enough time for the ingredient flavors to blend.
2 green mangoes
1 cup finely diced ripe tomatoes
1/2 cup finely chopped shallots
2 green hot chiles, finely chopped
2 tablespoons red wine vinegar
2 tablespoons sugar
1 teaspoon salt
1/2 cup finely chopped roasted peanuts
1. With a sharp knife carefully peel mangoes. Slice as much flesh as possible away from the large pit and chop the flesh as fine as possible.
2. In a mixing bowl stir together chopped mango, tomatoes, shallots, minced chiles, vinegar, sugar and salt. Let mixture stand for 30 minutes, then stir in chopped peanuts and serve.
