Tonkatsu Sauce

Makes about 3/4 cup sauce

Savory and sweet, certain Japanese “fast” foods become habit forming with a side of this sauce. Great with anything panko-crusted or brushed on Japanese “pizza” pancakes, okonomiyaki.

2/3 cup all natural ketchup

2 tablespoon vegetarian Worcestershire sauce

2 tablespoons dark brown sugar

1 tablespoons shoyu soy sauce

1 tablespoons mirin cooking wine

1 teaspoon dry mustard powder

In a small saucepan whisk together ingredients until mustard powder is completely blended into the sauce. Simmer over medium heat for 2 minutes, stirring occasionally. Serve warm or at room temperature. Keep leftover sauce chilled, stored in a tightly covered container.
